Jollof Rice

Jollof Rice

Preparation time: 50 minutes

Ingredients:

  • 1 derica (5 standard cups) rice
  • Cooking oil
  • Onions
  • 70g tinned tomato
  • 4 sachets or equivalent of Poi-Poi Sauce
  • Meat stock
  • Shredded chicken (optional)
  • Desired seasonings

Directions:

  1. Parboil rice
  2. Fry onions and tinned tomato until onions are cooked then add the Poi-Poi Sauce
  3. Add meat stock, chicken, seasonings and rice.
  4. Bring to a boil then lower heat and simmer until cooked.
  5. Enjoy!
